Energizing and delicious Peanut Butter Maca Overnight Oats, are one amazing breakfast to have. It’s super nutritious and satisfying meal that is perfect for busy mornings.

From time to time, I tend to get over excited and obsessed with one particular ingredient. I then stuff like everything with it and every day I think of new ways to incorporate that ingredient into my meals. Lately, I’m super obsessed with maca powder. Not that it’s a bad thing to be obsessed with world most powerful superfood. But I started to feel I’m maybe overdoing it, you know…. maybe a little too much.

How to not love maca. I mean, its deep earthy mildly nutty flavor fits nicely with everything. That’s the problem, you see – It goes perfectly with everything i eat lately. I use it in my smoothies, and macaccino is just one amazing drink. So yummy! Also I have a freezer stocked with Turmeric Maca Energy Balls.

But I noticed one more thing about maca. It affects positively on my body, leaving me full and energized. And I DO LOVE that feeling. I’m still not sure about balancing hormones thing (how do you even know that?!), but maca serves me good as an energy booster, that’s for sure.

Just last week, I discovered another way to incorporate that amazing superfood into my daily eats. Ladies and gentlemen, say hello to most delicious breakfast you can imagine – Peanut Butter Maca Overnight Oats.

Peanut Butter Maca Overnight Oats have everything I love in one jar – super healthy oats, powerful maca powder (of course), my favorite peanut butter and raw chocolate + banana. Topped with crunchy peanuts. What’s not to love in this combo, right?!

These oats are so unbelievably good. And by good, I mean SOOO fricking good. Peanut Butter Maca Overnight Oats are sweet, creamy, so chocolatey… The flavors are just amazing. Seriously, be prepared to get mind blown. I mean, come on… peanut butter and chocolate. It’s like GREATEST combo ever! Add then there’s maca with its distinct caramel, malt-like flavor. Oh-main-Got!

Its deliciousness is a curse really. Once you started munching on these Peanut Butter Maca Overnight Oats, you just can’t stop. And oats + peanut butter + banana + chocolate are ONE FILLING combination. So quickly you find yourself so stuffed, so full and you barely ate like what – two – three spoons. You’re in position where you want more, but you simply can’t stuff another bite. It’s a curse I say. A curse!

The good thing is that you can have these oats for breakfast, as well as for the dessert, or even for dinner. You can pack it in a jar and carry to the office. Hello yummy healthy quick lunch that will make your colleagues drool.

It will satisfy even the hungriest and it WILL keep you full for a quite some time.

But this meal is not only packed with nutrients. It has some serious super-powers form maca containing essential vitamins and minerals, as well as antioxidants. In addition to that, this is the simplest breakfast you can make. Another bonus is that you can make a bunch of these oats in advance, and keep it in the fridge for several days. That way you have your breakfast ready in no time. It’s just perfect for busy mornings.

Peanut Butter Maca Overnight Oats

Ingredients

  • 1 cup unsweetened almond milk or plant milk of choice
  • 1 teaspoon maca powder optional
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1 cup rolled oats
  • 1 medium banana
  • 1 tablespoon peanut butter

For raw chocolate:

  • 4 teaspoon coconut oil melted and cooled
  • 4 teaspoon cacao powder
  • 1 teaspoon maple syrup

Instructions

  1. In a blender mix together almond milk with maca powder, vanilla, and maple syrup until there are no lumps left. Add the milk to a jar along with rolled oats. Stir well. Make sure that the oats are completely covered with the milk.
  2. Close up the jar with a lid. Refrigerate for at least 8 hours or overnight.
  3. Next morning add sliced banana, top everything with creamy peanut butter and raw chocolate and some chopped nuts.

For raw chocolate:

  1. Put all ingredients in a bowl and mix well until you get a smooth mixture.

Recipe Notes

As a measure, I used UScup (240ml). Kepp leftovers refrigerated up to 3-4 days in a glass jar with a lid.

    Looks delicious, but I’m curious…you talk about how amazing maca powder is, but in the recipe, it is optional?

      Yes, I put it optional because not everyone loves maca taste. It’s very strong and flavorful. If you’re first time maca user, I suggest you give this recipe a try … with maca of course. And if you end up not like its taste, next time just omit it. :)
