If you’ve been following me on Instagram lately you’ve probably noticed my obsession with overnight oats. Well, school started this week and with it, all the comfort of having a normal, easy-going family breakfast in the morning has gone. I’m all in making ahead and prepping the meals the night before to ease the stress the next morning of course. And what a better way to get all well fed in no time, than to prepare delicious, creamy, incredibly nutritious OVERNIGHT OATS.

Don’t know about you, but back to school for me also means the change of season. Summer is over. Beautiful romantic Fall is taking its place. So it’s only natural that lately, all my meals are Fall inspired.

These Apple Cinnamon Overnight Oats gives me precisely that warm fuzzy feeling of Fall that I’ve been looking for to brighten my rainy gloomy mornings. It tastes just like grandma’s sweet apple pie and it smells just like perfection. It’s a Fall in a jar, with all the healthiness I need for starting the day right.

Oats are actually a great option for hectic mornings. Overnight Oats are not only super easy meal to prepare, but also mega NUTRITIOUS. It’s an incredible HEALTHY meal with many health benefits. Oats are among the healthiest grains on earth. They are a gluten-free whole grain and a great source of important vitamins, minerals, and antioxidants. Oats are rich in carbs and fiber, but also higher in protein and fat than most other grains.

Overnight oats also offer endless possibilities for you to play with flavor combos – like peanut butter and chocolate in these Peanut Butter Maca Overnight Oats. Just yummy!

Overnight oats give you a chance to express your mood but also creativity. You can choose toppings, fruits, and spices according to your current desires. It’s plain simple meal but yet never boring.

To make these Apple Cinnamon Overnight Oats I used rolled oats and beautiful mild flavored almond milk. I also added some peanut butter that gave not only incredible creamy texture but also special nuttiness + so many NUTRIENTS – proteins and healthy fats for energy. I rounded up this tasty story with amazing HEALING super-spice – Ceylon cinnamon.

This nutritious base you can make days ahead and keep refrigerated. In the morning you just have to add toppings. Easy!

The star of this Apple Cinnamon Overnight Oats is, of course, fresh apple that I coated with more cinnamon. You can never overdo with this spice so add as much as you like. It gives incredible flavor but also natural sweetness. Same as the banana in this case.

Since I wanted to make this healthy breakfast more interesting and more nutritious, I added dried blueberries and hemp seeds too. You can totally use fresh blueberries here, or frozen one if you have. One of the reasons I love hemp seeds is because they’re great for getting a little extra protein here and there. But I love them the most for their essential fatty acids, especially Omega 3 that is great for our heart health.

These Apple Cinnamon Overnight Oats are simple meal packed with many nutrients and ADDED SUGAR-FREE. Perfect energizing make-ahead breakfast great for busy mornings.

Ingredients

For the base:

  • 1/2 cup rolled oats*
  • 1 cup almond milk
  • 1 tablespoon creamy natural peanut butter
  • 1 teaspoon Ceylon cinnamon
  • Pinch of salt

Toppings:

  • 1/2 ripe sweet banana
  • 1/2 sweet apple
  • 1/4 teaspoon Caylon cinnamon
  • 1 teaspoon Hemp seeds
  • 1 tablespoon dried blueberries optional

Instructions

  1. Add all of the ingredients to a pint-sized mason jar. Mix well to combine.
  2. Top with a lid and place in the refrigerator overnight.
  3. In the morning add toppings.

Recipe Notes

As a measure, I used UScup (240ml).
*For GLUTEN-FREE option, use certified gluten-free oats.
Oats can be eaten cold directly from the refrigerator or heated in the microwave for 30-60 seconds. Overnight oats will keep in the refrigerator for up to 5 days.
