Apple Cinnamon Baked Oatmeal makes the perfect easy make-ahead breakfast or brunch. This healthy baked oatmeal recipe is made with all natural WHOLESOME ingredients and refined sugar-free. It’s packed with oats, sweet apple chunks, Goji berries and crunchy walnuts. It’s a delightful family meal filled with romantic seasonal flavors.

Apple Cinnamon Baked Oatmeal

There’s something special in this late Summer. The days are much shorter. Mornings are much colder and midday air so much fresher. The overall feeling of upcoming Fall begins to show. And there are these late Summer fruits – apples, pears, plums. So beautiful in colors and tastes. We actually have apples in the pantry throughout all seasons, but this time of year apples are somewhat special. That’s because locally grown apples are now in season.

So a week back, a bucket full of apples from my grandmas garden arrived. Fresh, sweet and juicy apples, natural – as mother nature meant apples to be. Absolutely perfect! And as soon as that basket came into my house, the beautiful apple cinnamon aroma started to spread around the kitchen. Yup, it was time to start baking with this beautiful healthful fruit.

Apple Cinnamon Oatmeal Cookies were first on the menu, of course. Following the amazing (kiddos favorite) Apple Carrot Muffins. And since school is about to start next week, this Apple Cinnamon Baked Oatmeal sneak into our breakfast menu too. And it will stay on our menu throughout all apple season. This fruity casserole is the easiest, most delicious sweet breakfast you can imagine.

Apple Cinnamon Baked Oatmeal

Apple Cinnamon Baked Oatmeal is one super easy to make breakfast. It’s freezer friendly, can be made a day ahead and it’s a no-brainer really. You will only need a few simple ingredients too.

To make this wonderful casserole I used all natural, WHOLESOME goodies – like oats and FRESH fruits. Oats are like the healthiest grains on the planet and if you haven’t started cooking, baking and making stuff with oats, then you should definitely start NOW.

Oats and oatmeal have so many health benefits: they keep our heart healthy and lower our blood sugar levels. Plus they make us stay full longer, which is great if you want to lose weight. Oats are low in calories and loaded with good-for-our-digestion fibers. They are also a good source of plant-based proteins and loaded with many powerful antioxidants, vitamins, and essential minerals – like manganese, magnesium, iron and vitamin B1. Isn’t that like the coolest food EVER?

Apple Cinnamon Baked Oatmeal

In addition to oats and fresh APPLES, which are both the star in this Apple Cinnamon Baked Oatmeal (doh like obviously), I also tossed in some walnuts packed vitamins and minerals, as well with some powerful antioxidants and anti-inflammatory omega-3 fats good for our heart health. Walnuts gave this baked oatmeal a nice nutty flavor but also crunchiness in every bite.

What makes this baked oatmeal recipe so good and so irresistible are the sweet, delightful apples, of course, but also a fragrant, super HEALTHY spice – Ceylon cinnamon. This super-spice is known for its anti-inflammatory, antioxidant, and antimicrobial effects. Which is all good since a school and flu season is about to start.

I upgraded this oatmeal casserole even more with some more superpowers from superfoods – Goji berries and hemp seeds. Sour Goji berries balanced the sweetness nicely and added up immune boosting superpowers. Hemp seeds are a great source of fiber as well as proteins and omega-3 fatty acid so they added up to overall nutrition.

This Apple Cinnamon Baked Oatmeal is incredibly sweet but REFINED SUGAR -FREE and low on calories. It’s soft, pleasing and so chewy, full of warm Fall flavors.

The best part is that this baked oatmeal deliciousness can also be assembled, covered and refrigerated overnight to bake in the morning OR baked in the evening and then just reheated in the morning. I know those first weeks going back into morning school routine will be taught (and hectic). I will look for ways to sleep a bit longer in the morning so this Apple Cinnamon Baked Oatmeal is the perfect solution.

Yes, it’s absolutely perfect casserole to serve on busy weekdays or weekend morning. Plus, it’s a truly delightful and HEALTHY family meal filled with romantic seasonal flavors and many NUTRIENTS.

Apple Cinnamon Baked Oatmeal

Ingredients

  • 3 cups rolled oats
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoon Ceylon cinnamon
  • 1 1/3 cup milk plant-based or cow's low fat
  • 1/3 cup Maple syrup
  • 1 large egg
  • 3 tablespoon coconut oil melted and cooled
  • 2 sweet apples chopped
  • 1/4 cup walnuts roughly chopped
  • 1/4 cup Goji berries
  • 1/4 cup hemp seeds optional

Instructions

  1. Grease a casserole pan with nonstick cooking spray and set aside. Preheat the oven to 350F.
  2. In a large bowl, whisk together dry ingredients - oats, baking powder, cinnamon, and salt.
  3. In a separate large mixing bowl, whisk the eggs with milk. Add syrup and coconut oil. Mix until well combined.
  4. Add dry ingredients into wet and stir well to incorporate. Finally, add the chopped apples and walnuts, Goji berries and hemp seeds (if using).
  5. Pour the mixture into a prepared casserole pan and bake for 35-40 minutes until golden brown.
  6. Serve topped with fresh fruits (chopped apples or bananas) and honey or maple syrup.

      Hi Anne, thanks for stopping by. I’m so glad you like the recipe. ;) No, I don’t peel apples. I just make sure I wash them thoroughly before using – sometimes I use baking soda water. If you’re concerned about pesticides, then I suggest you peel your apples. I usually buy locally grown organic.
