Ingredients used
This pineapple coconut chia pudding recipe is super simple. You will need only a few basic ingredients:

- Chia seeds. You can use black or white chia seeds. Both work equally well and create the same thick, pudding-like texture.
- Coconut milk. I used unsweetened coconut milk. It gives the chia pudding a creamy texture and a lovely coconut flavor. Coconut milk from a carton will create a lighter pudding, while canned coconut milk will make it richer and thicker.
- Pineapple. I used frozen pineapple to make a thick, cold fruit puree. You can also use fresh pineapple.
- Sweetener. I used honey, but pure maple syrup works equally well. Use maple syrup to make this recipe vegan.
- Vanilla extract. Just a splash of vanilla pairs beautifully with the coconut and makes the pudding taste even more delicious.
- Coconut flakes. These are optional, but they add extra coconut flavor and a little texture.
How to make Pineapple Coconut Chia Pudding
This chia pudding is very easy to make. You will need only basic kitchen tools: a mixing bowl, spoon or whisk, and a blender or food processor.
Step-by-step instructions
- Start by measuring all the ingredients. I like to use measuring cups.
- Place chilled coconut milk in a mixing bowl.
- Add honey or maple syrup and vanilla extract. Stir until the sweetener is completely dissolved.
- Add chia seeds and mix well using a whisk or spoon.
- Leave the chia pudding to rest for 15 minutes. The seeds will absorb the liquid and expand, creating a thick pudding.
- Stir the mixture halfway through the resting time. This will help the chia seeds absorb the liquid evenly and prevent clumps.
- While the chia pudding is resting, place the frozen pineapple in a blender or food processor.
- Blend until you get a thick and smooth pineapple puree.
- Taste the pineapple puree and add a little honey or maple syrup if needed.
- Prepare two glasses or jars for serving.
- Divide the pineapple puree between the glasses.
- Spoon the coconut chia pudding over the pineapple layer.
- Top with fresh pineapple pieces and coconut flakes.
- Serve and enjoy!

Tips for storing
- Keep the chia pudding sealed in an airtight container or jar in the refrigerator for up to three days.
- For the best texture, store the chia pudding and pineapple puree in separate containers and assemble them before serving.
- You can also prepare the pudding in individual jars for an easy grab-and-go breakfast.
- Chia pudding becomes thicker the longer it sits. Add a splash of coconut milk and stir before serving if it becomes too thick.
- Add fresh pineapple and coconut flakes just before serving.
Substitutions
- You can substitute honey with pure maple syrup, date syrup, or agave nectar.
- You can use fresh pineapple instead of frozen pineapple.
- You can also use drained canned pineapple packed in juice. Avoid pineapple packed in heavy syrup.
- Substitute pineapple with mango or use a combination of pineapple and mango.
- Substitute coconut flakes with chopped almonds, macadamia nuts, granola, or hemp seeds.

Recipe variations
- Make it vegan. Use pure maple syrup or another plant-based liquid sweetener instead of honey.
- Make piña colada chia pudding. Add a little lime zest to the pineapple puree and finish with toasted coconut flakes.
- Make pineapple mango chia pudding. Replace half of the pineapple with frozen mango.
- Make it extra creamy. Add a spoonful of coconut yogurt to the chia pudding before serving.
- Make it with protein powder. Add a small amount of vanilla protein powder to the coconut milk mixture. You may need to add more milk because protein powder absorbs liquid.
- Make it for meal prep. Divide the pudding between individual jars, cover, and refrigerate until ready to serve.
- Make a chia pudding parfait. Alternate smaller layers of pineapple puree and coconut chia pudding, then top with yogurt and granola.
Recipe tips
- Make sure to stir the chia pudding twice: once when you add the chia seeds and again after about 5 minutes. This prevents the seeds from clumping or settling at the bottom.
- Use chilled coconut milk for a refreshing pudding.
- If the chia pudding is too thick, add more coconut milk, one tablespoon at a time.
- Frozen pineapple creates a colder and thicker puree. Let it soften for a few minutes if your blender has difficulty processing it.
- If using fresh pineapple, choose one that is ripe and naturally sweet.
- For a smoother chia pudding, blend the coconut milk, chia seeds, vanilla, and sweetener before leaving the mixture to set.
- You can serve this pudding after about 15 minutes, but the texture will become thicker if you refrigerate it for several hours or overnight.

Sweetener recommendation
I used honey in this pineapple coconut chia pudding recipe. It adds mild sweetness and pairs beautifully with pineapple and coconut.
You can use other sweeteners:
- Use pure maple syrup to make the recipe vegan.
- Use date syrup or agave nectar.
- Use liquid stevia or another liquid low-carb sweetener.
- Avoid granulated sweeteners unless they dissolve easily in cold liquid.
Always taste the pineapple before adding extra sweetener. A ripe pineapple may be sweet enough on its own.

is this coconut milk from a can or the carton etc stuff ?
Natalie says
I usually make my own coconut milk but if I use storebought, than I buy the one in carton box. Coconut milk in can is a full fat while in carton box is plain and more for drinking and everyday cooking.
