After feeding myself with Chocolate Avocado Smoothie for the last couple of weeks for de-stress, and after those incredible crazy-good Fudgy Cacao Walnut Brownies we had for Valentine's, I'm completely hooked on bitter-sweet tasting deliciousness called CHOCOLATE. Can't imagine anything other than chocolate satisfying my cravings right now.
Well, honestly, after that Valentine's brownies, I'm craving chocolate even more. To be more precise - I need BROWNIES! And I was just about to make another round of those delicious fudgy Valentine's brownies on Monday, but then I realized I actually need a quick fix. Something chocolaty, sweet, easy to make... something no-bake that can be done in 10 minutes TOPS!
I remembered Cacao Energy Balls that I really love and haven't made like in ages. BUT something was not quite right with these balls. Oh-no! This time I wanted more fudginess, more softness in every sweet chocolate-filled bite. That's when I envisioned these No Bake Brownie Bites.
After I made them and after I had that first bite, they instantly become my favorite. I firmly believe that these Brownie Bites was just meant to be created that day and shared on my blog this week for you to enjoy too. Because, these little soft and delicate, rich tasting relishes are just perfect. They made me soooo happy and complete. Hope they give you the same pleasure and excitement.
How to make Brownie Bites
Well, to make these Brownie Bites, first of all, you don't need to turn on the oven. Which is like woohoo, right?! You will only need a few really simple ingredients you probably have in the house already. + 10 minutes of your time.
The base for these Brownie Bites are walnuts. I ground them in a grinder (like the one you use for grinding coffee) until I got something like an oily, moist mixture. Not quite the nut butter but somewhere on the path of becoming one (if I continued to grind them). You can just fine-chop walnuts in regular food processor, but grinding them will give you the softer texture of the Brownie Bite dough.
I've then put the walnuts mixture into food processor and added Medjool dates that I previously soaked in hot water. This time I used chopped ones that are something like candied dates - soft and super sweet. They also contributed in making a dough super soft and fudgy.
The main star of these No Bake Brownie Bites is, of course, cacao powder - unprocessed and raw - that is bitter, deep flavored, antioxidant rich, delicious and soooo HEALTHY. Seriously, if you haven't yet, invest in a good quality cacao powder. And use it as much as you can.
Cacao powder health benefits are numerous and you won't feel guilty indulging in chocolate treats anymore, because this incredible SUPERFOOD ingredient is filled with only good healthy calories.
To make these little delights even more interesting, super tasty and HEALTHIER, I also tossed in some cacao nibs. This time I used Yukon sweetened cacao nibs. Slightly sweetened these cacao nibs are less bitter than regular cacao nibs and a great alternative to dark chocolate chips which you totally can use here if you don't have cacao nibs.

Yes! These little sweet deliciousness are 100% vegan, gluten-free, added-sugar-free, kid-friendly.... so super tasty. Not to mention fudgy, soft, melt-in-your-mouth, chocolate filled and SO HEALTHY, nutritious and loaded with SUPERFOODS!
Can Brownie Bites be frozen?
Absolutely YES! You can freeze these beauties up to 3 months. Just make sure you zip-lock them tightly so they don't pick up the scent of the other stuff in the freezer. Yuck!
I always have some energy balls in my freezer. It's a great way to keep myself on a track with my healthy diet, especially when that nasty sweet-tooth craving strikes.
Brownie Bites, same as other energy balls, are great SNACK: post and pre-workout snack, after school kids snack, lunchbox snack.... you name it. They are also great portable snack too, for trips and picnics.
They are so pretty too. You can even serve these as a dessert. Or gift-wrap them for special occasions. These Brownie Bites are delicate, chocolaty, super soft and so enjoyable. I'm 100% sure you gonna fall in love with them as much as I did.
No Bake Brownie Bites
- Soak Medjool dates in hot water for a few minutes. Drain, and reserve water.
- Fine grind walnuts in coffee grinder or food processor.
- Add ground walnuts, dates, cacao powder, coconut flour, salt, and vanilla into a food processor and process on high for about a minute until dough is formed.
- Check texture by pinching the dough between your fingers. It should be sticky and able to keep its shape. If the mixture is too dry, add more water in which you have soaked the dates.
- Add cacao nibs and pulse a few more times.
- Using a tablespoon, scoop out dough and roll between your palms to form your balls. Roll in cacao powder.
