    Cinnamon French Toast

    Sweet and perfectly flavored, this Cinnamon French Toast is destined to make your morning better. Lightly crisp and golden on the outside, topped with almond butter and FRESH FRUITS, this fluffy French Toast is the perfect easy breakfast that is utterly delicious.

    French toast has always been family favorite weekend breakfast. My boys love waking up on Sunday morning smelling the freshly baked French Toast. It's a scent that makes them rush down in the kitchen in their pajamas with big smiles on their faces and thousands kisses for me.

    These delicious crispy baked golden slices make them so happy. So excited. It's magical. I really enjoy preparing them this simple yet delicious breakfast over and over again just to see them so happy.

    Sometimes when I'm super lazy I make French Toast Vanilla Muffins or when strawberries are in season I like to make Strawberry French Toast Bake. But when I wanna really surprise them, I make Cinnamon French Toast. It's sweet and flavorful, crispy from the outside, and soft and fluffy from inside. Topped with fresh fruits and almond butter, it's a breakfast that is both satisfying and nutritious. So good!

    Plus this recipe is great way to use up old bread you have in your house. The older the bread, the better. Old bread will soak more batter making the french toast PERFECT!

    Cinnamon French Toast Batter

    The batter is the base for making the French toast. It's super easy to whip up. You only need a few stapled ingredients, a mixing bowl, and a whisk. Here are the ingredients you'll need:

    • EGGS: I always use free range eggs.
    • MILK: I love to use whole cow's milk to make Cinnamon french Toast. Higher fat content in whole milk makes the French toast nice and creamy. You're welcome to use almond or any other milk you prefer.
    • CINNAMON: Cinnamon is a star in this recipe. It gave unbelievable scent, flavor and sweetness. 
    • SALT: Salt will balance flavors in egg and milk batter.

    Mix the batter in a bowl. You can use a whisk or fork to mix the batter together. Make sure the eggs and milk are thoroughly beaten together.

    How to make fluffy French Toast

    • You can use non-sticky skillet or electric griddle to make the French toast. I prefer using the cast iron skillet. Make sure that the skillet is hot before you start cooking the French toast.
    • Day-old, slightly stale or dried out bread works best.
    • Soak each side of the bread in the French toast batter. You want both sides of the bread to soak up all of the egg mixture. Don’t leave the bread in the mixture too long or it will get soggy.
    • Use a spatula, fork, or tongs to flip the bread in the French toast batter.
    • I like to cook French toast on extra virgin coconut oil. But you can use butter if you prefer. Both coconut oil and butter will give the French toast extra flavor but with butter, you'll get nice golden brown crust. If you're using butter make sure you use organic grass-fed butter.
    • Place a little coconut oil or butter on the hot pan and let it melt. Place the soaked pieces of bread onto the hot, oily pan.
    • Cook the French toast on both sides until golden brown, crisp around the edges, about 2-3 minutes per side. Work in batches. Do not over crowd the pan.
    • When you're done with one round, whip out the pan with paper towel and add more butter or coconut oil for next round. 
    • Place French toast on paper towel. Paper towel will soak extra oils from the toast. It's not necessary to do that. I just don't like oily French toast.
    • Serve hot. Keep the leftovers covered in a food container in the fridge.
    • Don't reheat the French toast in the microwave. It will become soggy. If you want to reheat, use the oven. 350F for a few minutes will do the job.

    French Toast toppings

    French Toast is really a wonderful breakfast. You can grab a slice as it is, freshly baked. It's sweet and covered with nutritious eggs and healthy fats, loaded with fibers from grains in bread. But if you want to make your breakfast really powerful and fill it with more healthy nutritious stuff you can totally do it. French Toast allows you to use all sorts of toppings you like and to tailor the breakfast to your desires. You can top Cinnamon French Toast with:

    • Sliced banana: for extra nutrients and sweetness.
    • Fresh berries: for freshness and antioxidant boost.
    • Nut butters: for energy and healthy fats.

    Sprinkle all with cacao nibs for extra crunchiness, antioxidant and mood boost. I like to use Yacon sweetened cacao nibs.

    Some like pouring extra sweeteners like maple syrup or honey over French toast. I'm not a fan of that extra sugars so I just suggest you to skip it because it's not needed here. Those are actually unnecessary sugary calories you don't want in your breakfast. Besides, there are enough natural sugars in fresh fruits.

Crispy baked, topped with fresh fruits and beautiful almond butter, it's a nutritious meal filled with flavors that will surely make your morning brighter.

    Cinnamon French Toast

    Ingredients
      

    • 8 slices whole grain bread
    • 4 eggs
    • 1 cup milk cow's whole milk or milk of your choice
    • 2 teaspoons cinnamon
    • Pinch of salt
    • 2 tablespoon grass-fed butter or coconut oil for greasing the pan

    Toppings:

    • Almond butter
    • Fresh fruits
    • Cacao nibs or dark chocolate chips

    Instructions
     

    • In a large bowl, whisk together the eggs, milk, cinnamon, and salt.
    • In a large pan, melt 1-2 tablespoons of the butter or coconut oil over medium heat.
    • Working in batches, dip a few slices of bread into the egg mixture, turning to coat, then let the excess egg mixture drip off.
    • Place the bread in the hot pan, being careful not to overcrowd the pan.
    • Cook the french toast sticks on each side, flipping until each side is golden brown and crispy.
    • Transfer to a plate covered with paper towels (if you want to soak excess oils).
    • Serve topped with almond butter and fresh fruits. Sprinkle with cacao nibs or dark chocolate chips.
