A few days ago, I posted this avocado toast on my Instagram story, and my inbox went crazy with messages from people curious to know how to make this delicious beauty. It's been a long time since I shared some savory recipes on my blog, so I thought it was a great time to maybe change things a bit and post something somewhat different than Chocolate Avocado Smoothie or Blueberry Banana Pancake.
I love this avocado toast for many reasons. The first and most obvious reason is because of the AVOCADO. I totally love it, and this is one of my favorite ways to eat it - smashed on a toast. The second reason is TURMERIC. This spice is stapled in my cooking. Turmeric makes every meal so bright and enhances it not only with flavor but with so many benefits as well.
CHICKPEAS would be the third reason. Like avocado, it has some amazing nutrient superpowers that are hard to ignore. Plus, it's incredibly tasty. Nutty with some sweetness.
All these ingredients play a starring role in this Chickpea Avocado Toast. It is incredibly tasty, HEALTHY, and super easy to make.
Ingredients used
To make this amazing avocado toast, you will only need a few ingredients.
- AVOCADO: Avocado is AMAZING - packed with nutrients and all the good quality calories. It's loaded with healthy fats – monounsaturated fatty acids, aka omega-3s that are heart-healthy and anti-inflammatory. Avocado is also rich in magnesium, potassium, and fiber, as well in many essential vitamins – like those “B Group vitamins”. Make sure you use ripe avocado here to give the desired creaminess.
- CHICKPEAS: Chickpeas, or garbanzo beans, are a type of legume. They have such a fantastic taste, nutty and somewhat sweet, but a nutritional profile as well. Chickpeas are packed with fibers and proteins. This combination will make you full for a long time and keep your appetite under control — That's why chickpeas are an excellent option when you're looking for a light but complete meal.
- TURMERIC: Bright yellow and so delicious, turmeric may be the most potent spice in existence. Curcumin, the active component in turmeric, has been used in Ayurvedic medicine for centuries due to its strong antioxidant properties. (1) Antioxidants are compounds that fight cell damage, protecting our bodies from oxidative stress. They are essential for our immunity too.
Other ingredients you'll need:
- Extra virgin olive oil
- Black Pepper
- Salt
- Sourdough bread
How to make Chickpea Avocado Toast
- Drain and rinse 1 can of chickpeas. Pat them dry with pepper kitchen towels. Set aside.
- Warm a skillet over high heat and add 1 tablespoon of extra virgin olive oil to the pan.
- Toss in chickpeas and cook on medium heat for 3 to 4 minutes, continually stirring with a wooden spoon. Add in 1 teaspoon turmeric and stir until chickpeas are coated with turmeric.
- Keep cooking for a few more minutes until chickpeas are nicely toasted around the edges. Remove from the heath.
- Add a few drops of lemon juice and sprinkle with salt. Shake the chickpeas to distribute. Set aside.
- Toast the bread in a toaster.
- In a small bowl, mash 1 avocado with the fork. Season with salt a dash of pepper to taste.
- To assemble: Spread mashed avocado on toasted bread. Top it with roasted chickpeas. Sprinkle with pink peppercorns, and parsley, and drizzle everything with EV olive oil or flaxseed oil.
Tips for storing
- Store the leftover chickpeas in an air-tight container and keep in a cool place for up to 5 days.
I'm pretty sure you will love this avocado toast, the same as I do. Besides being incredibly delicious, it's so good for our health too. This simple meal is loaded with fibers, proteins, and healthy fats. All the nutrients our body needs in one meal.

Chickpea Avocado Toast recipe

- 1 can chickpeas, in water(16 oz., 400g)
- 1 tablespoon extra virgin olive oil plus more to drizzle
- 1 teaspoon turmeric powder
- 1 avocado
- 2 slices bread I used sourdough
- Sal and pepper to taste
- Lemon juice
- Red peppercorns to sprinkle
