Okay. I admit. I'm totally addicted to roasted oven baked potatoes. Whole or halved - seasoned with aromatic spices or just plain salted - baked solo or with other veggies. No matter what way, I absolutely LOVE IT! And I'm not the only one hooked on baked potatoes. My whole family loves it too. But when I'm preparing THIS roasted garlic parmesan potatoes, when warmth and garlic scent starts to spread throughout the kitchen, we all go crazy from hunger. We can't wait to sit down at the dinner table and dig in. We usually don't need any meat served with this roasted potatoes. We just have it with a big bowl of Cabbage Carrot Slaw or with some healthy dipping sauce. It's a perfect dinner!
This recipe is so simple, I actually have no idea what to talk about in this post. Maybe just to write you guys a recipe and that's it?! ... I know that you're impatiently scrolling down to the recipe already. BUT let me say something about potatoes. Briefly. I won't bother you too much. It's closely related with something I often hear from many people, that simply isn't true.
Many weight loss diets declared potatoes worthless vegetable and bad carbohydrate which I strongly disagree. All REAL FOOD - veggies and fruits ARE HEALTHY!
Did you know that potatoes are one of the rare plants that can be cultivated organically? It doesn't require any fertilizers or pesticides for its cultivation, although farmers often use it - unfortunately. That's why I LOVE potatoes from my grandmother and mother in law garden - all natural, super healthy. Potato is a very good source of vitamin B6 and a good source of potassium, copper, vitamin C, manganese, phosphorus and super healthy dietary fibers. Potatoes also contain many phytonutrients. Potatoes contributes to our health by helping regulate our blood sugar, it cleans the liver and protects our cardiovascular system.
Unfortunately, what makes potatoes unhealthy is its preparation and sides that are served with potatoes. Most people eat potatoes in the form of greasy French fries or potato chips, and even baked potatoes are typically loaded with unhealthy fats like butter or sour cream. Thus prepared potato is potentially bad for health. But if you take away the extra fat and deep frying, potatoes transforms into healthful low calorie, high fiber food.
So you see, it's not potatoes that will make you fat or unhealthy. It's the way you prepare it that's potentially bad for your health.
This roasted garlic parmesan potatoes baked in the oven is the perfect low-calorie meal, full of nutrients. In addition to being healthy, it's super easy to prepare. It may look simple but it's anything but ordinary. This potato is spiced with fragrant garlic powder and rosemary and enriched with delicious parmesan cheese and extra virgin olive oil. The mixture of cheese and garlic on crispy potato crust is just amazing. Crispy on the outside, but inside, beautiful soft textured. Truly addictive.
I didn't peel potato skin for this recipe. I just gave my potatoes a good wash. If you don't like potatoes skin, feel free to remove it. While the potatoes are baking in the oven you can dedicate yourself to other activities. Like doing homework or playing with your kids, or doing laundry (ok maybe), cleaning the house or ironing (no way!). You can even take a nap (that's sounds good). Serve roasted garlic parmesan potatoes as a side dish with any meat. Or just with the big bowl of freshly chopped green salad.

Roasted Garlic Parmesan Potatoes
Ingredients
- 5 medium-sized potatoes
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
- 4-5 tablespoons freshly grated Parmesan cheese
- ½ teaspoon Himalayan salt to taste
Instructions
- Preheat oven to 395F (200C). Line the large baking tray with parchment (baking) paper. Set aside.
- Wash potatoes - previously peel the potatoes if you don't like the skin. Dry potatoes with paper towels and cut them into equal parts - a quarter. Make sure they are about the same thickness and size.
- Place the potatoes in a large bowl.
- Pour the olive oil over the potatoes and season them with garlic, rosemary, and salt. Add grated parmesan and toss together to coat evenly.
- Place potatoes on the prepared baking tray in a single layer.
- Bake 30-35 minutes, until golden and crisp.
- Serve immediately.

Baš sam neki dan konačno probala napraviti ovakve krumpiriće i super su mi uspjeli! Nekako sam uvijek imala dojam da to meni neće dobro ispast pa se uvijek na kraju odlučim za onako obične rostane krumpire i povrće, ali kad sam vidjela ovaj post rekla sam, e sad ćeš ih napravit pa makar bacila sve poslije! :) Sreća prati hrabre! ;) Hvala za recept i za poticaj! :)
