Or this lovely Pineapple Cucumber Salad that I'm sharing with you today. It's bright and bursting with fresh summer flavors. It's a bit addictive too, well at least to me... because of crunchiness.
You may think this is one CRAZY combo, having having a fruit in your veggie salad. But actually, flavors in this salad are well balanced. PERFECT. The sweetness of the pineapple is balanced with the acidity of the lime, and the crunchy sweet red bell pepper goes so well with refreshing cucumber. The addition of aromatic red onion and cilantro are just amazing. This salad just screams SUMMER!
This salad goes perfectly as a side dish with chicken or fish. Especially with grilled chicken or fish which makes this Pineapple Cucumber Salad perfect addition to any sort of BBQ or picnic you have planned. Pineapple Cucumber Salad
Ingredients
- 1 medium pineapple chopped
- 1 large cucumber or 2 small, chopped
- 1 red bell pepper chopped
- ½ red onion chopped
- 2 tablespoons extra virgin olive oil
- 2 limes zested and juiced
- ⅓ cup cilantro roughly chopped
- Salt and pepper optional
Instructions
- Combine all ingredients in large salad bowl and toss lightly to distribute the lime juice and zest evenly.
- Season with salt and pepper if desired.
- Serve immediately or keep chilled until ready to serve.
