I must admit. This Halloween craziness that's been happening over the internet for past two weeks totally got me. Pumpkins are everywhere. Literally! Scary costumes, treats, and Halloween themed desserts are popping out on my screen like crazy. Foggy mornings accompanied with beautiful Fall colors definitely contribute to this overall Halloween mood. I totally like it!
In Croatia, people don't celebrate Halloween like people in the US does - with costumes, candies, trick or treat. Yeah, unfortunately, we don't have that tradition here. But some people still love Halloween and have own tiny version of it at homes. Like my family does.
My boys usually do Jack O' Lantern pumpkin, and we decorate the house. I prepare some Halloween themed snacks and some pumpkin desserts - Pumpkin Loaf Cake is every year so popular. And at evening we usually watch some themed cartoons and family movies and have fun.
So this year for Halloween celebration I decided to make something special for my boys. A screaming Halloween Ghost Vanilla Donuts. These donuts are so sweet. So irresistibly soft... fun and sooo spooky.
My kiddo is all in ghosts and spooky stuff lately, and that's how the idea for these donuts came to my mind. We were supposed to do ghost cookies together, BUT since my hubby didn't have time to 3D print us ghost cookie mold I looked for another option.
Since it's a tradition to bake donuts when is carnival season here in Croatia, I kinda merged American and Croatian traditions together in this lovely fun ghostly donuts.
I really love these Halloween Ghost Vanilla Donuts because they require only a few simple ingredients and 15 minutes of time. It's also super fun to make these donuts with kids.
You may think that these Halloween Ghost Donuts are just like any other donuts - full of calories, sugar, and excess fat. Well, you're wrong. These donuts are made with all HEALTHY ingredients. They are refined sugar-free and baked in the oven - which means NO ADDED FATS.
For making these donuts I used whole wheat flour rich in nutrients – fibers and super healthy coconut oil. Donuts are made without refined sugar – they are sweetened with maple syrup. I also used vanilla that enhanced donuts with a beautiful fragrance and warm aroma. For the coating I used powdered xylitol. You can sub this with erythritol.

Halloween Ghost Donuts
Ingredients
- 1 ½ cup whole wheat flour
- ½ teaspoon Himalayan salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 2 egg whites
- 2 tablespoon extra virgin coconut oil melted and cooled
- 4 tablespoon pure maple syrup or honey
- 2 teaspoon vanilla extract
- ½ cup Greek yoghurt
- Powdered xylitol or erythritol
- Dark chocolate* for making ghost eyes
Instructions
- Preheat oven to 350F (180C). Grease donut pan.
- In a large bowl mix together dry ingredients - flour, salt, baking powder and soda.
- In a separate bowl whisk egg whites. Add melted coconut oil, honey, vanilla extract and Greek yogurt and stir gently.
- Add dry ingridients into the wet ingredients. Mix well.
- Fill donut pan with the mixture using a pastry bags or simple plastic bag. Make sure you don't overfill.
- Bake for 14-17 minutes until donuts get nicely golden.
- Remove from oven. Allow donuts to cool for 5 minutes.
- Tip donuts out and coat with powdered xylitol or erythritol. Make ghost eyes from dark chocolate.
