    Isn't it the French Toast like the BEST breakfast ever? I mean I love having Coffee Chocolate Smoothie or Berry Breakfast Bars. But I loveeee French toast. My whole family loves it.

    When I changed my diet, I easily give up almost all unhealthy food, but when it came to French Toast, that was a real struggle. We love having a French Toast for breakfast. That's why I had to think of something that will satisfy our cravings and yet not overload us with unnecessary fats. I needed a healthier version of classic fried French Toast.

    For a long time, I didn't know that there is an alternative. Lately, I'm experimenting a lot with food baked in the oven - as an alternative to deep frying in oil. So I thought, maybe I can somehow bake bread in the oven and have nutritious breakfast that we really love.

    And so the idea for oven-baked French Toast was born. And why not make it more fun and put French Toast in a muffin pan. Heureka!

    We all know that french toast is a great way to reuse old bread. According to the classic recipe, the bread is soaked in a mixture made from eggs and full-fat milk and fried in oil or butter. Later, you try to "squeeze out" the excessive grease with paper towels, but that doesn't help much. Fat is already absorbed deep into bread, and you end up eating empty calories.

    To make a HEALTHY French Toast I used whole wheat bread, eggs, plant-based milk and healthy fats - coconut oil. Ha! Healthy tweaks!

    Unlike classic French Toast, this meal is nutritionally rich - it contains fiber from whole grains and protein from eggs and very little fat. It can be absolutely fat-free if you use muffin liners.

    Preparation is really easy. A classic, with a twist at the end. First I made a mixture from eggs and milk to which I added a pinch of salt and vanilla extract. Then I added whole wheat toast bread sliced into small cubes into the mixture. (TIP: As older the bread, the better because it will quickly absorb a tasty mixture.) And now, instead of frying bread in oil, just fill muffin cups with bread mixture and bake for 20 minutes in the oven. Easy peasy!

    When the cute little French Toast Vanilla Muffins are done, pour some honey or syrup over it and serve with fresh fruits - blueberries, raspberries, bananas, whichever you prefer. And voilà... your nutritious and healthy French Toast Vanilla Muffins are ready. I promise you and the kids gonna love it!

    French Toast Vanilla Muffins

    Ingredients
      

    • 5 large eggs
    • 6-8 thick slices of whole wheat toast bread
    • ½ cup milk plant-based or cow's low-fat
    • 2 teaspoons vanilla extract
    • Pinch of Himalayan salt
    • extra virgin coconut oil for greasing muffin pan
    • Honey or syrup for drizzling
    • Fresh fruits blueberries, strawberries, banana...

    Instructions
     

    • Preheat the oven to 350°F (180°C). Grease a muffin pan with olive oil.
    • In a large bowl, whisk together eggs, milk, salt and vanilla extract. Slice toast bread into small cubes. Add the sliced bread to the mixture and whisk together until the bread absorbs the mixture.
    • Divide the bread among the muffin cups.
    • Bake for 20 - 25 minutes until slightly crisped on top and browned.
    • Allow the cups to cool for 5 minutes in the muffin pan then scoop each one out and serve topped with honey or syrup and fresh fruit.
