    You know that feeling when you run out of breakfast ideas. Well, it happened to me last week. Honestly, I got tired of muffins, fruit smoothies, chia puddings and eggs. Even overnight oats and grits with milk that I love so much. I needed a change. Some different breakfast.

    Blueberries are now totally in season, and recently I got the first bunch of locally grown raspberries. It didn't take me long to find the idea and to make this ultimate super Berry Banana Breakfast Oat Bars.

    To make this Berry Banana Breakfast Oat Bars I used oats which are not only super nutritious but like superfood for our body. Oats are among the healthiest grains on earth. Yeah! Super cool! They are a gluten-free whole grain and a great source of high-quality water soluble fibers, which is why they are so healthy. Also, oats are rich in plant-based proteins and many vitamins and essential minerals like magnesium, calcium, potassium, selenium.

    Oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels and a reduced risk of heart disease. I LOVE oats for that. I really do. I use oats for making apple cinnamon and carrot cookies that we love so much and in daily cooking.

    In addition to oats, which are the main star in this Berry Banana Breakfast Oat Bars, I also used a ripe banana. The banana added up nutrients but also joined the whole mixture nicely. Also banana sweetened the mixture, so this Berry Banana Breakfast Oat Bars contains little added sugars.

    On oat-banana base I decided to put chia jam made from fresh raspberries that my friend Marina gave to me the other day. She's my main raspberry dealer, and thanks to her I did make that beautiful Lemon Raspberry Loaf Cake that was huge hit last summer.

    Ok, so you maybe noticed. I'm a HUGE fan of chia seed jam made with fresh fruits. I started last summer with blackberry chia jam and that last week I made that amazing cornbread with sour cherry chia jam. Yes.. I said.. I'm a huge fan. A bit obsessed even.

    For this Berry Banana Breakfast Oat Bars, I used raspberry chia seed jam. Homemade, of course, and made with FRESH raspberries. Raspberry chia jam enriched this bars with more proteins, fibers but also with healthy omega-3. I couldn't resist so I added some blueberries too. So with this beautiful berry combination, I got a perfect summer dessert that can be served as breakfast, snacks or with the cup of favorite afternoon coffee.

    Ingredients
      

    For the base:

    • 1 ½ cups rolled oats*
    • ½ cup oat flour*
    • ½ teaspoon baking powder
    • ¼ teaspoon Himalayan salt
    • 2 teaspoon lemon zest , from one lemon
    • 1 ripe banana
    • 1 tablespoon honey or syrup
    • 1 teaspoon vanilla extract
    • 2 tablespoon extra virgin coconut oil , melted and cooled

    For topping:

    • 1 cup rolled oats*
    • 2 tablespoon extra virgin coconut oil , melted and cooled
    • 1 tablespoon honey or syrup , if desired and to taste

    For raspberry chia jam:

    • 1 cup fresh raspberries
    • 1 tablespoon honey or syrup or stevia
    • 1 teaspoon vanilla extract
    • 1 teaspoon vanilla extract
    • 2 tablespoon chia seeds
    • ½ cup fresh blueberries

    Instructions
     

    • Preheat the oven to 375°F (190°C) and line an 8"x8" (22cmx22cm) baking pan with parchment paper.
    • In a large bowl, mix together dry ingredients rolled oats, flour, lemon zest, baking powder, and salt.
    • In the separate bowl, mash banana with the fork. Add honey or syrup and vanilla extract and mix well until you get a smooth mixture.
    • Add banana mixture to oat mixture. Add coconut oil and mix until everything is well combined and a dough is formed.
    • Transfer the mixture into prepared baking pan. Using fingers or a spatula pressed the mixture down tightly and evenly. Bake for 10 minutes.
    • Meanwhile, prepare the topping. Mix all ingredients. Use your hands to incorporate the coconut oil and mix just until dough forms. It should not be very crumbly but should stick together. Set aside.
    • Remove the pan from the oven. Spoon raspberry chia jam over the surface and spread it evenly. Add blueberries. Sprinkle topping mixture on top, pressing down lightly. Bake for 30 minutes until the top turns a light golden brown.
    • Remove from the oven and let it cool completely. Cut into bars and enjoy!

    For raspberry chia jam:

    • Put fresh raspberries in a saucepan on a low heat. Mash raspberries with the fork. Simmer until the raspberries soften, for a few minutes.
    • Remove from heat and stir in syrup or honey or stevia and chia seeds. Stir for few minutes, and leave until mixture thickens for about 5 minutes.
    • Use the jam for making Berry Banana Breakfast Oat Bars. Store jam leftovers in a glass jar and refrigerate. The jam will keep in the fridge for up to 1 week.

    Notes

    * For gluten-free version make sure you use certified gluten-free products. Keep in an airtight container at room temperature for up to 1 week. As a measure, I used UScup (240ml).

      I made these the night before we intended to have them for breakfast so they were chilled when we ate them. They were wonderful! It felt like having dessert for breakfast! This is now a staple in our menu plan.
