For Strawberry Chia Pudding:

  • 1/2 cup strawberries fresh or frozen
  • 1 cup organic soy milk
  • 1 teaspoon vanilla extract
  • 1 tablespoons maple syrup or honey
  • 1/3 cup chia seeds
  • 1 tablespoon peanut butter
  • 1 teaspoon maca powder
  • 1 teaspoon baobab powder



  1. For Strawberry Chia Pudding: In the blender, combine all the ingredients and process until you get a smooth mixture. Taste and add more sweetener if needed. Pour in a glass.

  2. Topping: In a bowl mix diced strawberries with cinnamon.

  3. Top the strawberry chia pudding with the fresh strawberry cinnamon mix.
  4. Garnish with bee pollen and fresh mint.

Recipe Notes

Keep leftovers for up to 2 days in the fridge.

For VEGAN: Use maple syrup instead of honey. Omit bee pollen.

PREP THE NIGHT BEFORE: Prep the mixture and put it into jar with a lid. Place it in the fridge overnight. In the morning, top with fresh diced strawberries with cinnamon.
