Ingredients

  • 2 1/2 cups rolled oats or quick oats *
  • 1 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons Ceylon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup organic soy milk or milk of choice
  • 1 egg *
  • 1/3 cup pure maple syrup
  • 2 teaspoons vanilla extract
  • 3 tablespoon coconut oil melted and cooled
  • 1 1/2 cups grated carrots
  • 1/3 cup Goji berries

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease an 8.6" x 8.6" casserole dish.

  2. In a large bowl, mix together oats, baking powder, cinnamon, nutmeg and salt.
  3. In a medium bowl, whisk together the wet ingredients: milk, egg, maple syrup, vanilla, and coconut oil.
  4. Add the dry mixture to wet mixture and stir until combined. Mix in grated carrot and Goji berries.
  5. Pour mixture into prepared casserole dish and smooth out with a spoon.
  6. Bake for 40 minutes until lightly golden along the edges. The oatmeal will still look a bit soft or wet in some spots when it comes out of the oven, but it will firm up as it cools.
  7. Let cool for about 5 to 10 minutes before serving.
  8. Drizzle of maple syrup, or vanilla non-dairy yogurt.

Recipe Notes

Keep leftovers for up to 5 days in the fridge or up to 3 weeks in the freezer. Enjoy it warm or chilled straight from the fridge!

For GLUTEN-FREE: Use certified gluten-free oats.

For VEGAN: Use flax or chia egg.

PREP the night before: Prep the mixture and put it in the casserole. Cover the casserole dish with foil and place it in the fridge overnight. In the morning, remove the foil and bake.
