Ingredients

  • 1 cup rolled oats
  • 3/4 cup whole grain flour I used spelt flour
  • 1 teaspoon baking powder
  • ΒΌ teaspoon Himalayan salt
  • 1 egg
  • 1/4 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup milk
  • 2 teaspoon vanilla extract
  • 1/2 cup dark chocolate chunks or chips with 80% cacao
  • 1/2 cup raw peanuts roughly chopped

Instructions

  1. Preheat oven to 356F (180C). Line a large baking sheet with parchment paper.
  2. In one bowl, mix the dry ingredients - flour, oats, baking powder, and salt. Mix all together until combined.
  3. In a separate bowl whisk the egg, peanut butter, vanilla, maple syrup and milk. Mix well with a whisk until well combined.
  4. Add the dry ingredients to the wet mixture and mix. Finally, stir in the dark chocolate chunks or chocolate chips and chopped peanuts. Mix gently with a spoon. Let the mixture sit for a few minutes.
  5. With a scoop or spoon, scoop the dough, and place it on the baking sheet. Arrange the cookies 2-inches apart. Slightly flatten the dough with the spoon.
  6. Bake 12-15 minutes until the edges of the cookies begin to brown.
  7. Remove cookies from the oven, and let them cool for few minutes on a baking sheet. Then transfer cookies to a wire rack to cool completely.
  8. Keep in a cookie jar or airtight container.
