Ingredients

Salad:

  • 2 cups baby spinach
  • 2 cups arugula
  • 1 cup grape tomatoes halved (or cherry tomatoes)
  • 1/2 cup feta cheese reduced fat
  • 1 avocado pitted and chopped
  • 1 cup chickpeas rinsed and drained
  • 1/2 cup blueberries
  • Handful of microgreens - broccoli sprouts

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Himalayan salt to taste

Instructions

  1. In a big bowl, combine salad ingredients. Set aside.
  2. Whisk the dressing ingredients together in a serving jug.
  3. Pour the dressing over the salad; season with salt to taste. Serve.
