Rustic whole grain Irish Soda Bread Muffins are perfect St. Patrick's Day breakfast! These HEALTHY muffins are made with all natural ingredients and REFINED SUGAR-FREE, mildly sweet and just delicious. Flecked with raisins and caraway seeds, they are perfect with a cup of hot tea.

  1. Position a rack in the center of the oven and preheat the oven to 375 F (190C). Spray the insides of the muffin pan with cooking spray or line it with paper liners.
  2. In a medium bowl, mix together dry ingredients - the flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl with a whisk or hand mixer on medium speed, beat the egg. Add syrup and softened butter. Beat in the buttermilk or yogurt until fully combined – about 1 minute.
  4. Stir the dry ingredients into the wet ingredients until well combined.
  5. Fold in the raisins or currants and caraway seeds. The muffin mixture will be thick.
  6. Pour the mixture into prepared muffin pans. Fill muffin tins 3/4 full.
  7. Bake for 20 minutes or until a toothpick inserted in the center comes out clean or with just a few crumbs.
  8. Remove from the oven and let cool completely on a baking rack.
  9. Serve and enjoy!
