Ingredients

  • 1 ½ cup whole wheat flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 egg whites
  • 2 tablespoon coconut oil melted and cooled
  • 4 tablespoon pure maple syrup or honey
  • 2 teaspoon vanilla extract
  • ½ cup Greek yoghurt
  • Powdered xylitol or erythritol
  • Dark chocolate* for making ghost eyes

Instructions

  1. Preheat oven to 350F (180C). Grease donut pan.
  2. In a large bowl mix together dry ingredients - flour, salt, baking powder and soda.
  3. In a separate bowl whisk egg whites. Add melted coconut oil, honey, vanilla extract and Greek yogurt and stir gently.
  4. Add dry ingridients into the wet ingredients. Mix well.
  5. Fill donut pan with the mixture using a pastry bags or simple plastic bag. Make sure you don't overfill.
  6. Bake for 14-17 minutes until donuts get nicely golden.
  7. Remove from oven. Allow donuts to cool for 5 minutes.
  8. Tip donuts out and coat with powdered xylitol or erythritol. Make ghost eyes from dark chocolate.

Recipe Notes

As a measure I used UScup (240ml). *Use refined sugar free dark chocolate with 80% or more cocoa.
