Cabbage Carrot Slaw made with FRESH veggies - green cabbage, carrots, celeriac root and sweet corn is the ultimate summer salad. Crunchy, sweet and tangy with the touch of ginger freshness, this salad is both delicious and ridiculously simple!

For the salad:

  • 1 small green cabbage head , shredded
  • 2 medium carrots , roughly grated
  • 1 medium celeriac , roughly grated
  • 1 cup sweet corn

For the vinaigrette:


  1. Place shredded cabbage, carrots and celeriac in a large salad bowl. Add sweet corn and set aside.
  2. In a mixing bowl, whisk together the vinaigrette ingredients. Add apple cider vinegar and salt to taste. Whisk until well combined.
  3. Pour dressing over the cabbage mixture and toss to combine.
  4. Taste for seasonings and adjust accordingly.
  5. Place in the refrigerator for 15 minutes.
  6. Remove from fridge and serve.
