Ingredients

  • 1 ½ cup whole wheat flour
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt
  • 2 ripe bananas
  • 4 tablespoon greek yogurt
  • 4 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon coconut oil melted and cooled
  • 1 egg
  • 1 cup raw sliced strawberries
  • 2 tablespoon oats

Instructions

  1. Preheat oven to 180 C (356F).
  2. In a bowl, mix dry ingredients - whole wheat flour, baking powder, salt and cinnamon. Set a side.

  3. In separate larger bowl, mash banana with a fork. Add Greek yogurt, honey or syrup, vanilla, and coconut oil. Mix until smooth.

  4. Add in egg and mix until mixture is nice and smooth.

  5. Add flour mixture to wet mixture and stir. Add sliced strawberries and stir lightly.

  6. Line muffin pans with paper liners. Fill muffin cups with mixture, close to full. Sprinkle each muffin with oats.

  7. Bake for 22-25 minutes (check muffins with a toothpick; if the toothpick comes out clean, the muffins are baked).
  8. Remove from the oven and allow to cool completely before serving.
