Spring has come. The days are getting longer and warmer, shops and markets start to fill with colorful seasonal fruits and veggies. Ohh what a joy!! I just love the spring πŸ˜€ Strawberries are one of my favorite fruits, and these little red, heart-shaped vitamins joy are now in season. Two weeks ago, since they came into a local store, strawberries are must have fruit in my refrigerator and my favorite daily snack. Since temperature is growing rapidly here in Croatia, I believe I wouldn’t have to wait long since I’ll have first locally grown strawberries in my hands. Yummy! Can’t wait! πŸ˜‰

Strawberry, the spring princess

They call strawberry a spring princess with a good reason. Strawberry is low-calorie fruit full of antioxidants, vitamins, and minerals. Did you know that a handful of strawberries satisfy all your daily needs for vitamin C? Impressive, right?! In addition to being loaded with vitamin C, strawberries also contain phenols, which together with antioxidants reduces the risk of cancer and heart disease. Strawberries are a great source of dietary fibers that are good for our digestive system and protect us against colon cancer. Strawberries are also good for our nervous system, they lower bad cholesterol, increase our immunity and make our skin young and beautiful. Now you get why I love strawberries so much?! πŸ˜‰

Strawberry Banana Muffins

Last few days I’ve been thinking what dessert to prepare for all of you, my readers, that includes this very healthy fruit. The decision came quite by chance. On Sunday, I made a strawberry banana muffins for my family, and when I published the picture of muffins on my Instagram and Facebook page, it caused a real frenzy. So I decided to open the strawberry recipe season on my blog with these super healthy muffins.

Muffins are made with whole-wheat flour and naturally sweetened with ripe bananas, and have no refined sugars. To sweeten these muffins I used natural honey. When picking bananas, choose ones that are very ripe or even overripe. Ripe bananas will give muffins more sweetness and a finer texture.

In addition to having very little calories, these muffins are also low-fat. To give muffins moisture and richness, I used healthy coconut oil and Greek yogurt. Greek yogurt nutritionally enriched muffins with proteins and turned them into a real super healthy snack. Fragrant cinnamon and aromatic vanilla rounded off quite well this sweet muffin story.

Healthy strawberry banana muffins are the perfect spring dessert. You can enjoy in sweet, super moist bites on your sunny terrace with a cup of your favorite coffee on Sunday afternoon (like I did πŸ˜‰ ) or you can serve muffins for breakfast along with your favorite morning tea. Or just have them whenever you want πŸ˜‰

Sweet and super moist, deliciously fragrant, made with all healthy ingredients, these strawberry banana muffins are perfect spring dessert.

Ingredients

  • 1 Β½ cup whole wheat flour
  • 2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 ripe bananas
  • 4 tablespoon greek yogurt
  • 1 teaspoon vanilla extract
  • 1 egg
  • 4 tablespoon honey or syrup
  • 1 tablespoon coconut oil melted and cooled
  • 1 cup raw sliced strawberries
  • pinch of salt
  • 2 tablespoon oats

Instructions

  1. Preheat oven to 180 C (356F).
  2. In a bowl, mix dry ingredients - whole wheat flour, baking powder and cinnamon. Set a side.
  3. In a blender mix banana, vanilla and Greek yogurt until smooth.
  4. In a separate bowl whisk eggs with pinch of salt. Add honey, melted coconut oil and mashed banana mixture. Mix well.
  5. Add the dry ingredients to the wet ingredients. Stir until combined.
  6. Add sliced strawberries and stir lightly.
  7. Line muffin pans with paper liners or coat with coconut oil.
  8. Fill muffin cups with mixture, close to full. Sprinkle each muffin with oats.
  9. Bake for 22-25 minutes (check muffins with a toothpick; if the toothpick comes out clean, the muffins are baked).
  10. Remove from the oven and allow to cool completely before serving.

  3. Hello, Natalie. I’ve tried these, but used rice jelly and I think it did not work out so good, since I found it lacked sweetness (and I am not a sweet tooth at all). I must try again with honey. Thanks for all the good ideas! πŸ™‚ πŸ™‚

    • Hi, Vera πŸ™‚ I never tried rice jelly before so I don’t know exactly how sweet it is. I always use honey or agave syrup for preparing my baked desserts. They are sweet but neutral in taste. Sometimes I use rice, maple or even date syrup but they are very strong in taste and tend to take the overall flavor of desserts. They are much better for making smoothies and raw desserts πŸ˜‰
      Try making muffins with honey and add 3 tablespoons πŸ˜‰
